|Provenance:Collection of Li Shunhua, a disciple of Zhang Daqian張大千 環蓽庵食單 水墨紙本 立軸 一九七二年作黃君寔署簽並題詩堂詩堂:知味。大千先生不獨當今畫宗,亦近代之易牙也。此菜單為大鬍兄所治馔,而先生為錄之,老輩風流令人懷想。庚午(1990)秋,黃君寔題。款識:清炒芥蘭、草菰菽乳、樟茶薰鴨、清炒蝦片、粉蒸肉(紅薯打底)、水鋪牛肉片。六十一年十二月一日午間,繆雲老、馬晉老見過環蓽庵,因乞順華賢侄治饌留飯。爰。鈐印:(張)張爰之印、大千居士、環蓽庵、大千世界(黃)黃君寔鉨、山濤、松雲、浪迹山水之間藏印:李氏之寶來源:張大千弟子李順華珍藏註:李順華向大千討教古禮、書畫、鑑賞、烹調,然烹飪功夫卻下得最深。七十年代,大千移居美國,入住「環蓽庵」,偶有朋友造訪,李順華便身擔主廚之責,為之治饌。作於一九七二年的〈環蓽庵食單〉即為見證。當日,繆雲台(1894-1988)和馬晉三(1902-1998)到訪環蓽庵,並共進午餐。大千設計的食單上葷素搭配,有青菜,有豆腐,更有樟茶鴨、粉蒸肉、水舖牛肉片幾道川菜中的名菜。大千愛吃、會吃,不愧為老饕中的老饕,真應了黃君寔先生詩堂所題「老輩風流,令人懷想」。
