The sherry maturation unfolds a palette of dried fruit and dark chocolate framed by spicy oak. Prunes, sultanas and candied orange mingle with cedarwood and oak. On time, the fruity character develops into exotic passion fruit, enhanced by a heady floral note of narcissus and faded rose.PalateA sweet start followed by a crisp feel like raw silk opens on a spicy ground ginger and long peppercorn. The Oloroso sherry leads the way. Dark chocolate and oak release a bitter edge balanced by same sweet caramelized walnut as on the nose.FinishLingering and complex.
